Curried Okra With Onions

Wash, dry, trim the stem ends, and slice okra into 1/2-inch rounds.

Heat oil in a large skillet over medium-high heat. Add sliced okra and stir-fry for 10 minutes, stirring frequently.

While okra cooks, core, seed, and dice the tomato; peel and thinly slice the onion.

Once okra begins to brown, add the diced tomato, sliced onion, cayenne, turmeric, and curry powder.

Continue cooking for 3 minutes, or until the onions are tender.
