Instructions

  1. Combine beef cubes, flour, curry powder, ginger, onion powder, salt, and pepper in a food storage bag; shake to coat.

  2. Heat vegetable oil in a large saucepan over medium heat, then sauté celery and onion until tender.

  3. Add the coated beef and any excess flour; cook, stirring, until the beef is lightly browned.

  4. Pour in beef broth, cover, and simmer for 30 minutes.

  5. Stir in sweet potato, carrots, potatoes, and lima beans; cover and simmer for an additional 30 minutes.

  6. Add tomatoes, cover, and simmer for 10 more minutes.
