Instructions

  1. Thoroughly wash lemons in hot water, then slice 1/8-inch thick and remove any seeds.

  2. Combine salt and sugar in a bowl.

  3. Layer the bottom of a small glass container with the salt and sugar mixture.

  4. Alternate layers of lemon slices and the salt-sugar mixture until both are used.

  5. Seal the container and cure at room temperature for three days.
