Cucumber Pineapple Thai Salad
An easy cucumber and pineapple salad featuring a homemade Thai dressing.

Instructions

Combine all salad dressing ingredients in a cup; set aside.

Peel and dice the cucumber into chunks.

In a mixing bowl, combine pineapple chunks, diced cucumber, thinly sliced red pepper, sliced spring onion, and whole roasted peanuts.

Add most of the basil and coriander to the bowl, reserving a portion for garnish.

Pour the dressing over the ingredients in the bowl and toss well.

Transfer the salad to a serving plate, garnishing with the reserved basil, coriander, and additional nuts.

Serve with lime wedges on the side if desired.
