Cucumber Pineapple Thai Salad

An easy cucumber and pineapple salad featuring a homemade Thai dressing.

Instructions

  1. Combine all salad dressing ingredients in a cup; set aside.

  2. Peel and dice the cucumber into chunks.

  3. In a mixing bowl, combine pineapple chunks, diced cucumber, thinly sliced red pepper, sliced spring onion, and whole roasted peanuts.

  4. Add most of the basil and coriander to the bowl, reserving a portion for garnish.

  5. Pour the dressing over the ingredients in the bowl and toss well.

  6. Transfer the salad to a serving plate, garnishing with the reserved basil, coriander, and additional nuts.

  7. Serve with lime wedges on the side if desired.
