Instructions

  1. In a large skillet, heat olive oil over low heat, then sauté garlic, bay leaf, onions, peppers, diced tomatoes, and ham until the onions and peppers soften.

  2. Stir in tomato paste to caramelize, then add wine and simmer for 5 minutes, followed by cilantro and oregano.

  3. Remove from heat, let the mixture cool, and discard the bay leaf.

  4. Puree the cooled mixture in a blender or food processor, then season with salt and pepper.

  5. Use the sofrito immediately or store it in a sealed glass jar in the refrigerator for up to two weeks.
