Cuban Picadillo With Ground Beef (Picadillo Santiaguero)

Instructions

  1. Combine ground beef, oregano, cumin, salt, and pepper in a bowl.

  2. Heat 1 tablespoon olive oil in a pan, then sauté onions, green pepper, and garlic until soft.

  3. Stir in the seasoned ground beef, beef stock, and tomato sauce; cover and cook over medium-low heat for 15 minutes.

  4. Add diced potatoes, stir, cover, and cook for 15 more minutes until potatoes are tender.

  5. Uncover, add olives, and continue cooking for 15 minutes until the liquid evaporates and the meat is moist.

  6. Serve warm with rice, or cool to use as a filling for empanadas.
