Cuban Mojo Chicken Recipe

Instructions

  1. Preheat the oven to 400 F.

  2. In a large bowl, combine orange zest, lime zest, orange juice, lime juice, olive oil, cilantro, garlic cloves, jalapeño (if using), oregano, cumin, salt, and black pepper to create the marinade.

  3. Place the chicken into the marinade, cover, and refrigerate for at least 4 hours or overnight.

  4. Remove chicken from the marinade and place it on a large roasting pan.

  5. Roast the chicken for approximately 1 1/2 hours, or until it reaches an internal temperature of 165 F; cover with foil if it browns too quickly.

  6. Remove the chicken from the oven, cover loosely with foil, and let it rest for 10 minutes before carving.

  7. Serve with orange and lime slices, rice, and black beans.
