Instructions

  1. Start boiling plantain pieces in lightly salted water for about 10 minutes until soft.

  2. Drain and mash the cooked plantains in a bowl; set aside.

  3. Sauté bacon in a frying pan until browned.

  4. Add diced onion and chopped garlic, continuing to sauté for 5 minutes.

  5. Remove from heat, drain most bacon drippings, leaving 2 tablespoons.

  6. Fold in the mashed plantains until thoroughly mixed; serve warm.
