Crusty Cranberry Walnut Bread

Instructions

  1. Preheat the oven to 350 F.

  2. Combine instant yeast and water in a large mixing bowl; let stand 5-10 minutes.

  3. Add flour, salt, sugar, and melted butter; mix until dough forms, then knead for 10 minutes, adding more flour if sticky.

  4. Knead walnuts and cranberries into the dough until evenly distributed.

  5. Oil a large bowl, transfer dough, turn to coat, cover, and let rise until doubled (about 1 hour).

  6. Line 2 baking sheets with parchment paper and cornmeal.

  7. Punch down dough, divide into 2 portions on a floured surface, and form into tight rounds. Place on prepared sheets, cover, and let rest 45 minutes.

  8. Bake for 30-40 minutes until golden brown and hollow when tapped, or internal temperature is 195 F.
