Crusty Cranberry Walnut Bread
A versatile cranberry walnut bread that complements turkey or chicken sandwiches, makes excellent toast, and is suitable for freezing.

Instructions

Preheat the oven to 350 F.

Combine instant yeast and water in a large mixing bowl; let stand 5-10 minutes.

Add flour, salt, sugar, and melted butter; mix until dough forms, then knead for 10 minutes, adding more flour if sticky.

Knead walnuts and cranberries into the dough until evenly distributed.

Oil a large bowl, transfer dough, turn to coat, cover, and let rise until doubled (about 1 hour).

Line 2 baking sheets with parchment paper and cornmeal.

Punch down dough, divide into 2 portions on a floured surface, and form into tight rounds. Place on prepared sheets, cover, and let rest 45 minutes.

Bake for 30-40 minutes until golden brown and hollow when tapped, or internal temperature is 195 F.
