Crustless Pumpkin Pie Recipe

A simple, no-crust pumpkin pie recipe prepared entirely in a blender.

Instructions

  1. Preheat oven to 350 F and lightly grease a 9-inch pie plate.

  2. Blend all ingredients, excluding garnishes, for 1 minute on high.

  3. Pour mixture into the pie plate and bake for 50 to 55 minutes, or until a skewer comes out clean.

  4. Cool completely on a wire rack.

  5. Prepare whipped cream if desired.

  6. Pipe whipped cream along the edges, sprinkle with nutmeg, and serve remaining whipped cream with sliced pie.

  7. Serve pie at room temperature or chilled; refrigerate leftovers.
