Preheat oven to 350 F / 180 C and grease a 9x9x2-inch casserole or quiche dish.

In one bowl, whisk flour, baking powder, salt, and pepper.

In a separate bowl, beat eggs, then mix in cottage cheese, cheddar, melted butter, onion, and mushrooms.

Gradually whisk the flour mixture into the egg mixture until fully combined.

Pour the batter into the prepared dish. Arrange tomato slices on top, pressing them slightly, and sprinkle with parsley.

Bake for 40 minutes, or until set and golden.
