Crunchy Pistachio Brittle

Instructions

Prepare a buttered baking sheet or silicone mat, then combine vanilla and baking soda in a small bowl.

In a deep saucepan, combine butter, water, sugar, and syrup; attach a candy thermometer.

Cook the mixture over medium heat, stirring frequently, until it reaches 280 F.

Stir in the pistachios and continue cooking, stirring constantly, until the mixture reaches 300 F.

Immediately remove from heat, stir in the vanilla-baking soda mixture, then pour onto the prepared sheet.

Quickly spread the brittle and allow it to cool and harden completely.

Break the brittle into pieces and store in an airtight container at room temperature.
