Preheat oven to 400 F (200 C) with racks in upper and lower positions.

Cream sugars, butter, and peanut butter until light and fluffy, then beat in egg and vanilla until smooth.

In a separate bowl, combine flour, salt, and baking soda; gradually blend into the creamed ingredients.

Form 1-inch dough balls and place 2 inches apart on parchment-lined cookie sheets.

Dip a floured fork into each ball to create a criss-cross pattern, flattening slightly; dust with extra sugar if desired.

Bake for about 7 minutes until edges are lightly browned.
