Crumb-Topped Apple Pie Bars Recipe

Preheat oven to 325 F. Prepare a 13x9-inch pan by greasing and lining with parchment.

Whisk flour, salt, and sugars in a large bowl. Cut cold butter into cubes and incorporate until pea-sized crumbs form. Stir in egg yolk and vanilla, then mix until the dough holds together.

Reserve 2 2/3 cups of dough in the fridge. Press the remaining dough into the prepared pan, dock with a fork, and freeze for 30 minutes.

Combine sugar, flour, cinnamon, and salt for the filling. Peel, core, and thinly slice apples, then toss with the filling mixture and lemon juice.

Bake the frozen crust for 25 minutes, rotating halfway, until lightly browned.

Remove crust, increase oven to 350 F, and spread apple filling over the base, draining excess juice.

Crumble the reserved dough over the apple filling.

Bake for 55-65 minutes, rotating halfway, until the topping is golden and apples are tender.

Cool to room temperature before slicing and dusting with confectioners' sugar.
