Instructions

Heat 1/2 cup olive oil in a large skillet over medium heat.

Add flour and cook for 3 minutes, stirring constantly, until a smooth paste forms.

Slowly drizzle in milk and chicken broth, stirring constantly for up to 30 minutes until well combined.

Stir in nutmeg, salt, and pepper; continue cooking and stirring until the mixture is thick, smooth, and resembles mashed potatoes.

Reduce heat to low, add minced ham, and stir for 2 to 3 minutes until combined. Remove from heat and adjust seasoning.

Cool the mixture for 5 to 10 minutes, then refrigerate for approximately 3 hours until thoroughly cold.

Beat eggs with water in one shallow bowl and pour breadcrumbs into another.

Flour your hands, then divide and shape the cold mixture into 1-inch balls or oblong pieces.

Dip each shaped croquette into the egg mixture, then coat thoroughly with breadcrumbs.

Heat 1/2-inch oil in a large skillet to 355 F.
