Crockpot Salmon with Caramelized Onions and Carrots

Combine olive oil, butter, onions, baby carrots, and garlic in a 4-quart crockpot, then cook on low for 6 to 7 hours, stirring once, until vegetables caramelize (can extend to 8-9 hours).

Add salmon filet(s) on top of the vegetables and season with salt, pepper, and dill weed.

Cover and continue cooking on low for 1 to 2 hours, or 40 to 50 minutes for individual fillets, until the salmon flakes.
