Crockpot Fiesta Chicken and Black Beans

Instructions

  1. Slice chicken breasts into strips; optionally brown them in 1 tablespoon olive oil.

  2. Place chicken, drained corn, black beans, cumin, chili powder, onion, bell pepper, tomatoes, and tomato paste into the slow cooker. Cover and cook on low for 5-6 hours or high for 4 hours, adding broth or water to thin as needed an hour before finishing.

  3. Season with salt and pepper to taste.

  4. Garnish with cheese, guacamole, or sour cream, if desired.

  5. Serve with warm corn, fry bread, tortillas, or rice.
