Crockpot Chicken and Sweet Potatoes

Instructions

Season chicken on both sides with salt, cayenne pepper, paprika, curry powder, and ginger.

Place sweet potatoes and onion in a 3 1/2- to 4-quart slow cooker, then arrange the seasoned chicken over them.

Add peach preserves, vinegar, and soy sauce to the slow cooker.

Cover and cook on low for 6 to 8 hours, or until chicken reaches 160 F and sweet potatoes are tender.

In a small bowl, whisk chicken broth and cornstarch until smooth, then stir this mixture into the slow cooker.

Cover again and cook on high for 10 to 15 minutes, or until the sauce thickens.
