Crockpot Chicken and Quinoa Burrito Bowl
A slow cooker chicken burrito-style bowl features quinoa instead of rice and can be topped as desired.

Combine chicken, broth, tomatoes, onion, garlic, chili powder, garlic powder, and coriander in a slow cooker; cook on high for 3 hours.

Remove chicken, shred it, then return it to the slow cooker. Stir in quinoa, bell pepper, and beans; continue cooking on low for 2 hours.

Sprinkle with grated cheese and cook until melted.
