Crockpot Chicken and Quinoa Burrito Bowl

Instructions

  1. Combine chicken, broth, tomatoes, onion, garlic, chili powder, garlic powder, and coriander in a slow cooker; cook on high for 3 hours.

  2. Remove chicken, shred it, then return it to the slow cooker. Stir in quinoa, bell pepper, and beans; continue cooking on low for 2 hours.

  3. Sprinkle with grated cheese and cook until melted.

  4. Serve the chicken and quinoa in bowls, allowing individuals to add preferred garnishes.
