Drain pineapple liquid into a bowl, reserving the chunks, then whisk cornstarch into the liquid until smooth.

Stir ketchup, soy sauce, brown sugar, and pickles with juice into the pineapple liquid; add pineapple chunks, then cover and refrigerate the sauce.

Combine ground beef with bread crumbs, minced garlic, salt, pepper, egg, and milk, mixing thoroughly.

Shape the mixture into 3 to 4 dozen meatballs and arrange them on a foil-lined baking sheet.
