Crock Pot Stuffed Pork Chops Recipe
Butterflied boneless pork chops, stuffed with a savory breadcrumb and vegetable mixture, are slow-cooked with potatoes for an easy meal.

Butterfly and flatten each pork chop, then season with salt and pepper.

Melt 2 tablespoons butter in a skillet over medium-low heat; add celery, carrots, and onion, cooking until tender.

Combine the cooked vegetables with breadcrumbs, chopped pecans, sage, parsley, thyme, salt, pepper, and a beaten egg to create the stuffing.

Stuff each chop with a few tablespoons of the mixture, roll, and secure with a toothpick.

Place cut potatoes in the slow cooker, dot with 2-3 teaspoons of butter, and season lightly.

Arrange the stuffed pork rolls on top of the potatoes, then sprinkle any leftover stuffing.
