Crock Pot Stuffed Pork Chops Recipe

Instructions

  1. Butterfly and flatten each pork chop, then season with salt and pepper.

  2. Melt 2 tablespoons butter in a skillet over medium-low heat; add celery, carrots, and onion, cooking until tender.

  3. Combine the cooked vegetables with breadcrumbs, chopped pecans, sage, parsley, thyme, salt, pepper, and a beaten egg to create the stuffing.

  4. Stuff each chop with a few tablespoons of the mixture, roll, and secure with a toothpick.

  5. Place cut potatoes in the slow cooker, dot with 2-3 teaspoons of butter, and season lightly.

  6. Arrange the stuffed pork rolls on top of the potatoes, then sprinkle any leftover stuffing.

  7. Cover and cook on low for 7 to 9 hours, or until pork is fully cooked and potatoes are tender.
