Crock Pot Spanish-Style Pork Stew

Instructions

  1. Chop onion, cut pork shoulder into large chunks, peel and cut potatoes into 1-inch pieces, and thinly slice bell pepper.

  2. Heat vegetable oil in a skillet over medium-high heat, then brown the pork cubes on all sides.

  3. Place the chopped onion in the slow cooker, then layer with the browned pork, potatoes, and bell pepper.

  4. Combine tomatoes, vinegar, garlic, chicken broth, and a bay leaf in a bowl; pour this mixture over the slow cooker contents.

  5. Cover and cook on low for 7 to 9 hours, or until the pork is tender.

  6. Taste and adjust seasonings with salt and pepper as needed.
