Crock Pot South American Pulled Pork

Instructions

  1. Place chopped onion in a large crock pot. Season pork roast with salt and pepper, then place it on top of the onions.

  2. Insert garlic slices into the pork.

  3. Stir cumin, oregano, green chilies, ham base, and aji panca (if using) into water, then pour over the roast.

  4. Layer lime and orange slices over the roast. Cover and set crock pot to high.

  5. Cook for 2 hours on high, then reduce to low and cook for 6 more hours.

  6. Remove the meat. Strain the cooking liquid into a saucepan, discarding solids.

  7. Simmer the liquid until it reduces to about 1 cup.

  8. Preheat oven to 400 F. Shred the meat, removing excess fat. Stir the reduced sauce into the shredded meat.

  9. Spread the meat onto a baking sheet and bake for 10 to 15 minutes until slightly browned.

  10. Serve with lime wedges, garnished with cilantro if desired.
