Crock Pot Portuguese Chicken

Instructions

  1. Brown chorizo in a medium saucepan, then remove and set aside.

  2. Cook onions and garlic in the pan drippings until tender.

  3. Combine chorizo, onions, garlic, drippings, chicken, tomatoes, oregano, pepper, and tomato paste in a 4-quart slow cooker; mix thoroughly.

  4. Cook on low for 7 to 9 hours, until chicken reaches 165 F.

  5. Stir in artichoke hearts and olives, cooking for 10 to 15 more minutes.

  6. Serve as desired, often over rice.
