Crock Pot or Stovetop Beef Tips and Gravy

Stovetop Method:

1. Cut stewing beef into bite-sized pieces and slice mushrooms.

2. In a Dutch oven, brown the seasoned beef in 1 tablespoon of oil; remove beef.

3. Sauté diced onion and sliced mushrooms in the same pan with remaining oil until tender.

4. Return beef to the pan with beef stock, cover, and simmer on low for about 2 hours until tender.

5. Prepare a slurry by mixing cornstarch (or flour) with cold water, then stir into the simmering liquid and cook until the gravy thickens.

6. Adjust seasonings and serve.

Slow Cooker Method:

1. Combine stewing beef, mushrooms, onion, salt, pepper, and 1 cup beef stock in a slow cooker.

2. Cook on low for 6-8 hours, or high for 3 hours, until the beef is very tender.

3. Strain liquids into a saucepan and bring to a simmer.

4. Mix cornstarch with water to form a slurry, then stir into the simmering liquid and cook until thickened.

5. Recombine the thickened sauce with the beef tips and serve.
