Crock Pot Onion Soup Beef Pot Roast

Instructions

  1. Place 3-4 pounds beef chuck roast in the slow cooker, surrounding it with 2 cups baby carrots and 2 pounds potatoes cut into 2-inch chunks.

  2. In a separate bowl, combine 2 (10 3/4-ounce) cans condensed mushroom soup, 1 1/2 cups water, and 1 (1-ounce) packet dry onion soup mix.

  3. Pour this soup mixture over the roast and vegetables.

  4. Cook on low for 8-10 hours or on high for 3-4 hours, until the meat and vegetables are tender.

  5. Remove the meat and vegetables to a platter, cover to keep warm, and serve, optionally spooning pan juices over or using them for gravy.
