Crock Pot Lamb Stew

Instructions

  1. Cut lamb into bite-size pieces; peel and slice carrots, potatoes, and onions.

  2. Heat oil in a large skillet over medium-high heat; brown lamb pieces on all sides.

  3. Place sliced carrots, onions, and potatoes into the slow cooker, then top with browned lamb.

  4. Pour chicken stock into the skillet, bring to a boil while scraping browned bits, then season with salt and pepper; add to the slow cooker.

  5. Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours.

  6. Whisk flour and cold water in a small bowl until smooth to form a slurry; stir into the stew and continue cooking for 10 to 15 minutes.

  7. Serve hot, garnished with fresh parsley if desired, alongside crusty bread.
