Crock Pot Lamb Stew

Cut lamb into bite-size pieces; peel and slice carrots, potatoes, and onions.

Heat oil in a large skillet over medium-high heat; brown lamb pieces on all sides.

Place sliced carrots, onions, and potatoes into the slow cooker, then top with browned lamb.

Pour chicken stock into the skillet, bring to a boil while scraping browned bits, then season with salt and pepper; add to the slow cooker.

Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours.

Whisk flour and cold water in a small bowl until smooth to form a slurry; stir into the stew and continue cooking for 10 to 15 minutes.
