Crock Pot Lamb Shanks

Instructions

  1. Arrange sliced onions at the bottom of the slow cooker.

  2. Rub lamb shanks with Worcestershire sauce, then season with salt and pepper.

  3. Brown the seasoned lamb shanks in a heavy skillet with olive oil.

  4. Transfer browned lamb shanks and any pan drippings to the slow cooker, topping with whole garlic cloves and mushrooms.

  5. Combine red wine, beef broth, tomatoes, oregano, basil, thyme, allspice, and a bay leaf in a bowl; pour this mixture over the contents of the slow cooker.

  6. Cook on low for 6 to 8 hours until the lamb is tender and reaches 145 F; discard the bay leaf, then taste and adjust seasonings.

  7. Serve the lamb shanks with the pan juices and vegetables.
