Crock Pot Jamaican-Style Lamb Stew

A zesty slow-cooked lamb dish, infused with habanero, curry, allspice, and other Jamaican spices, yields tender meat.

Instructions

  1. Sear lamb cubes in 1 tablespoon oil in a skillet over medium-high heat until browned, then transfer to a slow cooker.

  2. Cook onion in the remaining 2 tablespoons oil in the same skillet until soft, then add to the slow cooker.

  3. Deglaze the skillet with 1/2 cup stock, scraping up browned bits, and pour into the slow cooker.

  4. Add the remaining 1 1/2 cups stock and all other ingredients to the slow cooker, stirring to combine.

  5. Cover and cook on low for 6 to 8 hours until the meat is falling apart; remove habanero before serving.
