Crock Pot Herb Pork Roast

Prepare the slow cooker by adding 1/2 cup water.

Make 16 small cuts (1/4 to 1/2 inch deep) in the pork roast and insert garlic quarters.

Combine salt, herbs, cloves, and lemon peel (if desired), then rub the mixture over the roast.

Place the seasoned roast into the slow cooker, cover, and cook on low for 7 to 9 hours, or until it reaches 145 F.

Remove the roast and let it rest, loosely covered with foil, for 5 to 10 minutes.

For gravy, mix cornstarch with remaining water until smooth, then add to the slow cooker juices and stir. Cook on high until thickened.

Slice the pork loin and serve, with gravy if prepared.
