Crock Pot Ham and Pea Risotto
A classic Italian rice dish, risotto can be easily prepared in a slow cooker for a convenient and delicious meal.

Instructions

In a saucepan, melt 2 tablespoons butter, then sauté onion and shallot for 5-7 minutes until tender.

Add rice and cook, stirring, for 3-4 minutes until lightly toasted.

Transfer this mixture to a 3-quart slow cooker.

In the same saucepan, warm chicken broth, wine or pear nectar, salt, and pepper over low heat.

Add the warmed broth mixture to the slow cooker with the rice and stir thoroughly.

Set slow cooker to high. Cover and cook for 1 hour.

Stir the risotto, then cover and cook for another 45-55 minutes until rice is almost tender. Add 1/2-1 cup more broth if a soupier consistency is desired.

Stir in peas and 2 tablespoons butter; cook on high for 15-20 minutes until rice is tender.

Turn off the slow cooker, stir in cheese, and let stand for 10 minutes.

Stir once more and serve immediately.
