Crock Pot Great Northern Beans

Instructions

  1. Rinse 1 pound dry great northern beans, inspecting them for any debris.

  2. Combine the rinsed beans in a slow cooker insert with 1 1/2 quarts water, 1 chopped large onion, 1 diced medium carrot, 1 diced large celery rib, 2 bay leaves, 2 cloves garlic, 1 tablespoon dry celery flakes, 2 to 3 sprigs fresh parsley, and 1/4 teaspoon black pepper.

  3. Cover and cook on LOW for 4 1/2 to 5 1/2 hours, checking for tenderness after 4 1/2 hours.

  4. Stir in 2 to 3 teaspoons salt, adjusting to taste.

  5. Discard the bay leaves before serving over rice, in salads, chili, stew, soup, or as a mash.
