Crock Pot Corned Beef and Cabbage Chowder Recipe

A hearty corned beef chowder prepared with diced corned beef, leftover cabbage, potatoes, carrots, onions, and cream of potato soup.

Instructions

  1. Dice corned beef, potatoes, carrots, and cabbage, then finely chop the onions.

  2. Combine diced corned beef, potatoes, cabbage, carrots, onions, chicken broth, and cream of potato soup in a 4 to 6-quart slow cooker.

  3. Cover and cook on low for 4 to 5 hours, stirring once at the halfway point.

  4. Stir in 1 cup of half-and-half, and season with salt and pepper.

  5. Re-cover and cook for 20 to 25 minutes more, or until hot; adjust consistency with additional half-and-half if needed.
