Crock Pot Clam Chowder

Instructions

  1. Chop clams into bite-sized pieces if necessary.

  2. Fry bacon or salt pork with onion until golden, then drain excess fat.

  3. Combine the fried bacon, onion, clams, cubed potatoes, liquid (water, broth, or clam juice), 1 teaspoon salt, and pepper in the slow cooker.

  4. Cook on high for 3 to 4 hours until the potatoes are tender.

  5. Around the 3-hour mark, whisk 1 cup of half-and-half or milk with cornstarch.

  6. Stir the cornstarch mixture and the remaining 3 cups of half-and-half or milk into the slow cooker, adjust seasonings, and heat through.

  7. Garnish with fresh parsley before serving.
