Crock Pot Chicken Fricassee Recipe
A flavorful crock pot chicken fricassee features tender chicken thighs in a creamy seasoned sauce.

Heat olive oil in a large skillet, then lightly season chicken thighs with salt and pepper. Brown chicken, skin-side down, for 7 minutes until golden, then flip and cook for 1 minute.

Pour chicken stock into a slow cooker and add the browned chicken, skin-side up.

In the same skillet, sauté onion, celery, carrots, mushrooms, and thyme over medium heat for 2-3 minutes until onions soften. Add this mixture over the chicken in the slow cooker.

Cook on high for 2-3 hours or low for 5 hours.

Remove chicken from the slow cooker and cover to keep warm.

Prepare a beurre mani\u00e9 by kneading butter and flour together until fully blended.

Stir half of the beurre mani\[u00e9] into the hot liquid in the slow cooker and continue cooking on high until thickened; add more if a thicker consistency is desired.

Stir in heavy cream and heat through. Season with salt, pepper, and 2 tablespoons fresh chopped parsley.

Serve the chicken with the sauce, garnished with extra parsley if desired.
