Instructions

  1. Combine apple cider, nutmeg, and curry powder in a small bowl.

  2. Microwave butter, onion, and garlic in a microwave-safe dish for 1-2 minutes until softened; transfer this mixture to a 3-4 quart slow cooker.

  3. Dip chicken breasts into the apple-cider mixture, then place them over the onion mixture in the slow cooker; pour any remaining mixture over the chicken and season with salt and pepper.

  4. Cover the slow cooker and cook on low for 5-6 hours, or until the chicken is almost cooked.

  5. Add sliced apples and continue cooking on low for 40-50 minutes, or until apples are tender and chicken reaches 165°F.

  6. Transfer the chicken and apples to a serving plate and cover to keep warm.

  7. In a small bowl, whisk vinegar, broth, and cornstarch together, then stir into the liquid remaining in the slow cooker.

  8. Cover and cook on high for 10-15 minutes, stirring occasionally, until the sauce thickens and bubbles; serve the sauce separately.
