Crock Pot Beef Rouladen
A classic German beef dish, rouladen features thinly sliced round steak filled with bacon, onions, and pickles.

Flatten 6 pieces of round steak, then spread each with mustard.

In a large skillet, cook bacon until crisp; crumble and set aside.

In the bacon drippings, sauté onion and garlic for 5 minutes, then add bell pepper and cook for 2 more minutes. Combine sautéed vegetables with crumbled bacon and pickles.

Divide the mixture among the beef pieces, roll them up, and secure with kitchen string. Season rolls with salt and pepper, then dredge in 1/4 cup flour, shaking off excess.

Brown the beef rolls in butter in the same skillet for 1-2 minutes per side.

Place carrots in a 4-6 quart slow cooker, top with the browned beef rolls, and pour beef broth over them.

Cook on low for 6-7 hours until tender. Remove beef rolls, discard string, and set aside. Remove carrots with a slotted spoon.

Whisk 1 tablespoon flour with sour cream and stir into the remaining slow cooker liquid. Return carrots and beef rolls to the slow cooker. Cook on high for 10-20 minutes until the sauce thickens, then season and serve.
