Croatian Sour Cherry Strudel (Štrudlu s Višnjama)

Preheat the oven to 400 F with a rack in the middle.

Combine 1/2 cup lukewarm water, 1/2 teaspoon vinegar, and 3/4 teaspoon salt. Cut 1 tablespoon cold butter into 2 cups all-purpose flour, then add the water mixture and stir by hand for 5 minutes until the dough becomes smooth.

Knead the dough on a lightly floured surface for 5 minutes, adding minimal flour, then cover with plastic wrap and let rest for 30 minutes.

Cover a large table with a generously floured cotton tablecloth. Place the dough in the center, brush it with melted butter, and roll to 1/8-inch thickness.

Stretch the dough by hand until it is paper-thin and drapes over the table, then trim the thicker outer edges.

Brush the stretched dough with melted butter. Along one long edge, place the cherry filling in a 3-inch strip, 2 inches from the edges, and sprinkle with ground walnuts.

Using the tablecloth, roll the strudel jellyroll fashion until completely rolled. Brush the top with melted butter.

Cut the strudel into sections suitable for baking sheets, tuck in the ends, and place them seam-side down on parchment-lined sheets.

Bake for 10 minutes. Reduce the oven temperature to 375 F and continue baking for 20-25 minutes until the strudel is crisp and golden.

Remove from the oven, cool slightly, slice, and dust with confectioners' sugar before serving.
