Croatian-Serbian Sweet Cheese Palacinke
Croatian and Serbian crepe-like pancakes, similar to blintzes, are prepared with sweet or savory fillings.

Instructions

Preheat the oven to 350F.

Combine all sweet cheese filling ingredients, then cover and refrigerate for 1.5 hours.

Blend batter ingredients until smooth, transfer to a pitcher, and rest for 30 minutes.

Ladle 2 ounces of batter into a buttered nonstick skillet, swirl to coat, and cook until lightly browned on both sides.

Remove and repeat with the remaining batter, separating each pancake with waxed paper.

Place 2 heaping tablespoons of filling on one edge of each pancake and roll it.

Arrange filled pancakes on a buttered baking sheet, spread with combined topping ingredients, and bake for 20 minutes.
