Croatian Palačinke Crepes

A traditional Croatian crepe recipe, perfect for either sweet or savory fillings, requires only minimal active preparation time.

Instructions

  1. Beat 3 large eggs and 1 cup milk in a medium bowl, then mix in 1/3 cup club soda.

  2. Add 1 cup all-purpose flour and 1/2 teaspoon salt, stirring until only a few lumps remain.

  3. Cover the batter and let it rest at room temperature for 30 minutes.

  4. Stir the rested batter until smooth.

  5. Heat an 8-inch nonstick pan, then add 1 teaspoon butter and 1 teaspoon oil.

  6. Pour about 1/4 cup batter into the hot pan, tilting to coat the bottom.

  7. Cook for 2 to 3 minutes until lightly browned on the bottom, flip, brown the second side, and transfer to a platter.

  8. Continue cooking the remaining batter, adding butter and oil every third crepe as needed, and stack the finished crepes to keep them warm.
