Croatian Bean Soup (Grah i Varivah)

Instructions

  1. Drain and rinse the soaked beans.

  2. Place beans in a large pot with 12 cups cold water and bring to a boil.

  3. Reduce heat to a simmer and skim off any surface foam.

  4. Stir in garlic, onion, smoked sausage, smoked ribs or ham hocks, bay leaf, salt, pepper, and Vegeta.

  5. Return to a boil, then reduce heat to simmer, partially covered, for 2-3 hours, or until tender; add water and stir occasionally.

  6. Remove the bay leaf, debone the meat, and return the meat to the pot.

  7. Continue simmering if a thicker consistency is desired.
