Crispy Yuca Frita: South American Yuca Fries

Instructions

  1. Start boiling a large pot of salted water.

  2. Peel 2 pounds fresh yuca, cut into large pieces, and remove the fibrous core.

  3. Cook yuca in the boiling water for 20-30 minutes until translucent and fork-tender.

  4. Drain yuca thoroughly and remove any remaining fibrous pieces.

  5. Cut cooked yuca into thick rectangular wedges.

  6. Heat 2 inches of vegetable oil to 350 F in a heavy frying pan over medium-high heat.

  7. Fry yuca wedges in batches, turning until golden brown.

  8. Remove fried yuca with a slotted spoon and place on a paper towel-lined plate.

  9. Season with kosher salt and serve hot with dipping sauce.
