Instructions

  1. Preheat the oven to 200 F and prepare a foil-lined baking sheet with a rack.

  2. Place catfish in a shallow bowl and pour buttermilk over it.

  3. Combine cornmeal, flour, salt, paprika, cayenne, and garlic powder on a plate.

  4. Dredge each fish fillet in the dry mixture, shaking off any excess.

  5. Heat 1 inch of oil in a deep skillet or Dutch oven to 350 F.

  6. Carefully fry 2 to 3 fillets at a time for 5 to 6 minutes until golden brown, turning halfway if the oil doesn't cover the fish.

  7. Transfer cooked fish to the prepared rack in the oven while frying remaining batches.

  8. Serve the hot fried catfish immediately.
