Instructions

  1. Preheat oven to 400 F. Start boiling a large pot of salted water.

  2. Add baby potatoes to boiling water and cook for 25-30 minutes until tender.

  3. Drain potatoes and cool for 5 minutes.

  4. Place cooled potatoes on a greased baking sheet and flatten each with a fork, ensuring they remain intact.

  5. Melt butter, olive oil, and garlic together in a microwave-safe bowl.

  6. Drizzle half of the garlic butter over the smashed potatoes, then season with salt and pepper. Reserve remaining butter.

  7. Bake for 20-30 minutes until crispy and golden brown.

  8. Reheat reserved garlic butter, then pour over baked potatoes and garnish with parsley.
