Instructions

  1. In a bowl, combine mashed potatoes, beaten egg, and onion; then stir in flour, cheese, salt, and pepper.

  2. Heat olive oil and butter in a large nonstick skillet over medium heat until sizzling.

  3. Drop 1/4 cup portions of the potato mixture into the pan, forming 3-inch circles that are 1/2-inch thick.

  4. Cook patties for 3 to 4 minutes per side until browned and crisp.

  5. Remove patties and drain briefly on paper towels.

  6. Serve immediately with preferred sauce.
