Instructions

  1. Preheat the oven to 450 F with a rack in the lower position.

  2. Combine oil and butter in a large, rimmed baking pan and melt it in the oven.

  3. Peel and cut potatoes into 1-inch cubes or wedges; peel and cut the onion into 8 chunks; mince the garlic.

  4. Arrange the cut potatoes, onion, and garlic in the pan, then stir to coat them with the melted butter and oil.

  5. Roast for approximately 1 hour, stirring occasionally, until the potatoes are golden brown and crispy.

  6. Season with salt and pepper, then toss with minced parsley just before serving.
