Instructions

  1. Preheat the oven to 350 F.

  2. Marinate chicken thighs in buttermilk and hot sauce for 3 to 4 hours, or overnight.

  3. Place a rack in a large, rimmed baking pan.

  4. Combine flour, kosher salt, pepper, and paprika in a shallow bowl.

  5. Pour 1/2 inch vegetable oil into a deep skillet and heat to 360 F.

  6. Remove chicken from marinade, coat thoroughly with the flour mixture, shaking off excess, then fry in hot oil for 2 1/2 to 3 minutes per side until lightly browned.

  7. Transfer fried chicken to the prepared rack and bake for 35 to 45 minutes, until the internal temperature reaches 165 F.
