Instructions

  1. Combine garlic and olive oil, then let infuse at room temperature for at least 4 hours.

  2. Preheat oven to 300 F. Cut bread into 1-inch cubes and mix with 1/2 cup cheese, dried herbs, paprika, salt, black pepper, and cayenne in a large bowl.

  3. Strain the garlic oil over the bread cubes, pressing out all liquid, then toss until evenly coated.

  4. Spread the mixture onto a baking sheet and bake for 15 minutes. Stir, then return to the oven for another 15 minutes.

  5. Remove from oven, sprinkle with the remaining 1/4 cheese, and bake for 10 to 15 minutes more, or until browned and crunchy. Cool completely before storing.
