Crispy Fried Tamales (Tamales Fritos)

Leftover tamales are transformed into a crispy, flavorful fried dish.

Instructions

  1. Heat 1 to 2 inches of vegetable oil in a heavy pot over medium-high heat to 360 F.

  2. Remove tamales from wrappers and, if desired, mix and shape into bite-sized balls.

  3. Beat one egg with a teaspoon of water in a small bowl.

  4. Whisk flour, masa harina, cumin, garlic salt, pepper, and parsley or cilantro in a shallow bowl.

  5. Dip each tamale or ball into the egg mixture, then into the flour mixture, coating thoroughly.

  6. Fry coated tamales in batches until deep golden brown.

  7. Transfer fried tamales to a paper towel-lined plate to cool, sprinkle with flaky sea salt, and serve warm with dipping sauce.
