Crispy Fried Onion Rings
Crispy deep-fried onion rings feature a distinctive cornmeal egg batter for an appealing texture, best made with sweet, yellow, or red onions.

Preheat the oven to 200 F and a deep fryer or heavy pan with 1 quart vegetable oil to 365 F.

Line a baking sheet with paper towels and prepare a separate pan for warming.

Peel onions, slice into 1/4-inch rounds, separate into rings, and soak in milk for 15-20 minutes.

Combine cornmeal, 2/3 cup flour, salt, pepper, melted shortening, egg, and 1 2/3 cups milk in a bowl; mix until smooth to form the batter.

Place 1 cup of flour in another bowl.

Remove onion rings from milk, dredge them in the plain flour, then coat in the prepared batter.

Fry the coated rings in batches for 2-3 minutes until golden brown.

Transfer fried rings to the paper-towel-lined sheet to drain, then move to the warming pan in the oven for up to 30 minutes.
