Crispy Fried Onion Rings

Instructions

  1. Preheat the oven to 200 F and a deep fryer or heavy pan with 1 quart vegetable oil to 365 F.

  2. Line a baking sheet with paper towels and prepare a separate pan for warming.

  3. Peel onions, slice into 1/4-inch rounds, separate into rings, and soak in milk for 15-20 minutes.

  4. Combine cornmeal, 2/3 cup flour, salt, pepper, melted shortening, egg, and 1 2/3 cups milk in a bowl; mix until smooth to form the batter.

  5. Place 1 cup of flour in another bowl.

  6. Remove onion rings from milk, dredge them in the plain flour, then coat in the prepared batter.

  7. Fry the coated rings in batches for 2-3 minutes until golden brown.

  8. Transfer fried rings to the paper-towel-lined sheet to drain, then move to the warming pan in the oven for up to 30 minutes.
